Au niveau du conditionnement de la viande à conserver, observez les gestes suivants :
- Laissez la viande, sous atmosphère protectrice ou sous vide d’air dans son emballage.
- Laissez la viande dans le papier paraffiné, en plaçant une assiette en dessous ou dans une assiette que vous filmez si trop de sang s’écoule du papier paraffiné.
Conservez la viande au réfrigérateur
- La viande crue doit être placée dans l’endroit le plus froid du réfrigérateur. C’est-à-dire sur l’étage inférieur, situé juste au-dessus du bac à légumes.
- Les viandes préemballées, avec du film alimentaire étirable, doivent respirer. N’empilez pas ces viandes ainsi emballées l’une sur l’autre.
- Les viandes ainsi réfrigérées peuvent se conserver d’une demi-journée à plusieurs jours :
- Conservez la viande 72 heures maximum au réfrigérateur.
- Conservez les produits tripiers 24 heures maximum au réfrigérateur.
- Conservez la viande hachée 12 heures maximum au réfrigérateur.

- L’agneau et le mouton frais : 8 à 10 mois.
