TUNIS – UNIVERSNEWS – Plusieurs familles tunisiennes viennent de célébrer la fête de l’achoura qui marque, pour les sunnites, le début d’une célébration aux connotations festives où la dimension ludique revêt moult manifestations riches en couleurs. Première fête liturgique de l’année lunaire, l’achoura coïncide avec le dixième jour du mois de Moharram et continue, malgré son caractère non férié, à être considérée comme une fête religieuse de premier plan.
Pour célébrer cette occasion religieuse sacrée, les habitants dans leur diversité sociologique, ont recours à des recettes ancestrales, jalousement préservées et transmises oralement pour préparer des plats «typiquement» traditionnels.
A Nabeul, les familles se réunissent autour d’un «Douida» préparé avec du poulet. A Tunis, les femmes ont coutume de ne pas faire le ménage, de ne pas se maquiller et de mettre uniquement du khôl en signe de deuil du martyr Hussein et de préparer également des pâtes au poulet. Au sud, dans la région de Gabès, on prépare des œufs colorés par les enfants ainsi qu’un couscous décoré d’œufs et de confiseries. A Sousse, on prépare le «mermez». Les enfants en profitent pour allumer un feu pour sauter dessus. A Monastir, on prépare le « bazine » sorte d’assida blanche, avec de la semoule de blé ou d’orge à laquelle on ajoute de la levure et une « marqa » qui peut être soit à base de viande, soit aux seiches.
Certaines régions préparent aussi du pain dur (sans levure) et du Ftir qui représente une sorte de beignets. Mais pour un bon nombre de familles la tradition d’Achoura se perd au fil des années. Pour certains c’est devenu un prétexte de se réunir autour d’un bon plat traditionnel
